JUMBO BANANA MUFFINS 
2 1/2 c. flour
3/4 c. sugar
1 tbsp. baking powder
3/4 tsp. salt
6 tbsp. butter
1 c. nuts, chopped
3 sm. ripe bananas
2 eggs
1/3 c. milk
1/2 tsp. vanilla

Blend butter, flour, sugar, baking powder and salt with pastry blender. Blend in electric blender the bananas, eggs, milk and vanilla. Mix dry ingredients with the rest. Grease muffin pans well. Fill to the top. Bake at 400 degrees for 25 minutes. Muffins rise very high. Test with toothpick for doneness. Remove from pan immediately. These muffins freeze well. Makes 12 large muffins.

What size muffin pan are you using for this recipe? If you are using a true jumbo muffin pan, this recipe makes only 6 not 12 when you fill them to the top. Using a regular 12 muffin tin, 25 mins is way too long and it makes more than 12.

You never should fill a muffin pan to the top. Every recipe Ive ever seen says to fill only 2/3 full. If u decide to bake in a regular size pan instead u would probably get 24 muffins 2/3 full but don't bake for 25 minutes just b/cause it says to bake 25 minutes for the giant muffins b/cause u are no longer baking giant muffins anymore. You would only bake them long enough so that they would be done and when you change the pan size you change the baking time, too. (do toothpick test always).

Please...it is not uncommon for certain recipes to direct filling muffin pans to the top: i.e., Jordan Marsh Blueberry Muffins which also suggests greasing the top of the pan, itself, because the muffins do rise high and wide...terrifically!

I used a jumbo pan for six. I filled it to the top as stated and it used all of the batter. Went slightly longer in my oven, 35 minutes. I have made this 3xs, keep wanting to freeze some, but they never last with just 6! :)

I was disappointed that they were not moist. Lowered heat to 350°F instead of 400°F as the recipe states. My mini muffins cooked in less than 10. After 15 at 350°F they were done. Not much color. Would not make again
