OVEN BAKED MEATBALLS 
4 beaten eggs
1/2 c. milk
3 c. soft bread (4 slices)
1/2 c. finely chopped onion
1/4 c. finely chopped green pepper
2 tsp. salt
3 lb. ground beef

In a bowl combine egg, milk; stir in bread crumbs, onions and green peppers and salt. Add meat; mix well. Chill for 15 minutes. Shape meat into 72 (1 inch) balls. Place in 2 baking pans. Bake at 375 degrees for 25 to 30 minutes. Place meatballs on another baking pan to cool.

This is a great base, however I used 1lb. Beef (ground chuck, pork, and turkey) then poblano pepper instead of bell, then added 1/2 cup Parmesan cheese. Absolutely loved the combination! Next time I'll reduce the pork and beef for healths sake.
