“APPLE AND MOLASSES MEAT LOAF” IS IN:

APPLE AND MOLASSES MEAT LOAF 
2 lbs. ground beef
1 cup bread crumbs or panko
1 egg, slightly beaten
2/3 cup finely chopped apple
1/2 cup chopped onion
1/2 tsp. granulated garlic
1/4 cup parsley, chopped
2 tsp. salt
1/2 tsp. black pepper
1/4 cup milk

Glaze:

2 tbsp. unsulphured molasses
1/4 cup ketchup

In a large bowl, combine ground beef, bread crumbs or panko, beaten egg, apple, onion and garlic, parsley, salt and pepper. Stir in molasses and milk using up to 1/4 cup of the milk (use only as much as is needed - this depends upon how moist the apples are). The mixture should not be too wet.

Transfer mixture into a greased 9x5x3-inch loaf pan.

Combine mixture for glaze and paint 1/2 over meat loaf.

Bake in preheated 350°F oven for about 60 minutes. Baste remaining glaze over meat loaf and bake for another 15 minutes.

Really really good fall meal. Only thing,there is no mention of how much molasses to use when adding milk. I use 1/3 cup. Use more or less I guess depending how much you like molasses! :-) Great with mashed potatoes and a veggie!

I made this recipe tonight; in a word, YUM! The reason I only gave it 4 stars is because the recipe only gives the amount of molasses used in the glaze and no mention of how much to put in the meat mixture. I didn't measure, but I'm estimating I used 1/4 cup. I also used fresh bread cubes and increased the amount to 2 cups, added 3/4 cup chopped fresh spinach and 1/2 cup chopped sweet red pepper. Since I was out of fresh onions, I used a one oz package of French onion soup mix. I recommend this recipe to everyone, it is delicious!
