EASY NO BAKE CHEESECAKE 
1/2 c. sugar
8 oz. cream cheese
8 oz. Cool Whip
1 tsp. vanilla
1 graham cracker pie crust
Fruit topping of choice

Blend cream cheese, Cool Whip, sugar and vanilla together until fluffy. Spoon into crust. Chill at least 2 hours. Top with fruit topping. Serves 8.

You can subsitute regular sugar for powdered sugar, and I used a 1/4 of a cup of sugar instead it was great

Tweaked the recipe with a little less sugar. I topped the cream cheese mixture/ cake with fresh lemon rind bits and i then made a thin cover of lemon juice and sourcreme. Topped with fresh raspberries and blueberries. Yum.

This is so simple and quick for a carry in. However I use 2 (8 oz.) packages cream cheese so it is not as whippy and it is so delicious. I have used peach pie topping and blueberry along with the common cherry and strawberry. I would like to know how much Splenda to use instead of sugar because I am diabetic and wondered if that would work. I really like Stevia also. If anyone knows I would like to hear from you. Thank you for this simply great recipe.
