EASY NO-BAKE CHEESECAKE 
8 oz. pkg. cream cheese, softened
1/2 c. sugar
1/8 tsp. salt
1/2 c. milk
1 tsp. lemon juice
1 tsp. vanilla
1 1/2 c. Cool Whip
Graham cracker crust
Fruit pie filling - optional

Beat cheese and sugar. Add salt, beat. Add vanilla, beat. Add milk, beat. Add lemon juice, beat. Fold in Cool Whip with whisk. Pour into pie shell. Chill at least 3 hours. Cover with cherry, blueberry or pineapple pie filling if desired.

This was Delicious. Substituted for lemon juice 1 1/2 tsp Lime juice and no topping, placed in freezer for three hours, thawed for about 30 min while enjoying evening meal.

This is an excellent, basic recipe that lends itself to many fruit variations! I made it with lime in the filling and topped with strawberries. Everyone loved it, so I'll definitely be making it again.

Great recipe! Needed a no-bake cheesecake to top a key lime pie in a 10-inch crust. Substituted key lime juice for lemon juice, and used 1 cup of heavy whipping cream instead of cool whip and milk. Whipped until the right consistency and voila! Key lime cheesecake!
