“CRUSTLESS QUICHE” IS IN:

CRUSTLESS QUICHE 
1 3/4 cups light cream, milk, or half and half
1 cup shredded Monterey Jack cheese
1/2 teaspoon salt
1/4 teaspoon paprika
1 teaspoon grated onion
pinch cayenne pepper
3 eggs
1 (4 oz.) can chopped green chilies
3/4 cup finely chopped ham (optional)

Preheat oven to 325°F.

Melt butter in 9 x 13 inch pan.

In a saucepan, scald the cream, milk, or half and half. When tiny bubbles begin to form around the edge, remove from heat and add the cheese. Stir until cheese melts, then add salt, paprika, onion and pepper. Beat in eggs, one at a time. Stir in green chilies (or jalapenos). Bake for about 45 minutes or until set.

May be frozen and reheated.

Perfect consistency, nicely custard vs egg flavor. Baked mine in a glass pie plate, buttered lightly and sprinkled a small amount of the Mexican 4 cheese I used (as well as some brie and Swiss I had to use up, & omitted the cayenne & chiles for my friend who needs it to be cool not hot;^)) to give it multi-colors, and at the end I broiled it for 2 minutes to brown the top(not crispy just until tiny bubbles pop on the top). It was exactly what I hoped for! Thanks CM

Delicious and easy. I added a tablespoon of cream-of-celery condensed soup to the milk, and 1/4 packet of Lipton Onion soup mix rather than chopped onion VERY GOOD!

I attempted this for a pot luck at church. I minced up deli ham, jalepeno, tiny bit of onion and the cheese... I left out the can of chilies. I cooked it in a 12-inch round tarte dish for an extra 5 minutes. I cooked it before church and Before serving, I Broiled some extra cheese on top to warm it up and give it color, and garnished with a few slices of jalepeno over a dollop of sour cream. It looked pretty and better yet the consistency was perfect! I'm not a talented cook, so I even impressed myself! Great recipe CM!

Crustless Quiche-this was done in a pie pan and it was very thin- maybe should have been in a smaller pan? bacon and onion

I use shredded cheddar cheese in an oiled glass pie plate to form a shell, and then add ingredients, works well (Keto).

I have made this for probably five years for Christmas breakfast and my family loves it. I do increase the eggs from 3 to 10 or 12 and it comes out nice and tall in the 9x13-inch pan. I also put two cans of green chilies. My family asks for it every year, so we're having it for Easter breakfast too this year. It turns out great every year.
