WAFFLE OR PANCAKE MIX 
1 c.+ flour
2 tsp. baking powder
2 tbsp. sugar
1/4 tsp. salt
1 1/3 c. whole milk
1 lg. egg
2 tbsp. vegetable oil
1/4 tsp. pure vanilla

Measure dry ingredients FIRST (keeps measures clean) and place in separate bowl. Baking powder may be substituted by using "self-rising" flour. Vegetable oil may be substituted by using butter.

Mix together last 4 ingredients in a large bowl. Pour dry ingredients into mixture slowly while "fold stirring". Do NOT over stir or stir out small lumps!! These are OK. Waffle mix may spread on griddle better if slightly runny.

Use medium-high or medium heat (never HIGH!); practice with heat. If too hot, pancakes will brown too fast and will be too firm. When they rise with bubbles, this is good!

Flour absorbs more or less moisture depending on the humidity in the environment. As in all baking, if your batter is too thin for what you're making, add a little extra flour; if too thick, add a little more liquid to adjust. Pancake batter usually has the consistency of heavy cream.

If the pancakes didn't rise sufficiently, check your baking powder or self-rising flour. Toss self-rising flour that is older than about 4 or 5 months for best results. And baking powder should be replaced every 6-8 months, or when you notice it's not working well anymore. It's possible that some moisture got into your baking powder can (always use a dry measuring spoon).
