“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

My daughter is allergic to eggs and is also lactose intolerant. I modified this fantastic recipe by adding 1 jar of Gerber's baby applesauce (about 1/4 cup) and reducing the milk (we use rice milk) by the same amount (so only 3/4 cup milk). I also only added 1 tsp of oil and 1 tbsp butter (she can handle a bit of lactose, so we use regular butter because it just tastes so much better than oil/margarine). The hint of apple with the cinnamon was heavenly and the pancakes cooked supremely well! It's true that these are actually better than 'normal' pancakes. Thank you so much for this recipe!!

My daughter is allergic to eggs, but I wanted her to be able to enjoy some good old fashioned hand made pancakes..I do add about a 1/4 to 1/2 cup cottage cheese in place of where an egg would be..it makes it soft and tender. It's been a big hit with roommates as well.

My husband has an egg allergy and these are PERFECT!! We've been making them for several years and find that the best way to have them is cooked with sliced bananas on the inside! Just mix sliced bananas into the batter and cook away!
