“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

GREAT recipe! Tasted just as good, if not better, than many recipes that call for eggs! YUM!

I would agree with the reviewer who suggested cutting the cinnamon level, however. These taste STRONGLY of cinnamon...a dash would do. ;)

Way too much cinnamon! The cinn overpowered the pancakes and no one at the breakfast table was able to finish because the flavor was too strong. Maybe cut it to 1/4 tsp or just leave it out. They weren't bad apart from that, however.

I made this recipe Gluten Free!! I substituted the flour for a gluten free all purpose flour, and the milk with Goat's milk. The pancakes are great! thanks.

This recipe is great!!! Just tried it, felt like eating pancakes and had no eggs in the fridge, they were very fluffy and delish!!! Added a trist to some of the batter.. Cadburys drinking chocolate.... Wow!

I've been using the same eggless panacake recipe for over ten years. It has always been just ok. Today I couldn't make them fast enough. My daughter loved them. She said she wants strawberries in it next time. I would make it with a pinch of sailt and less cinnamon in the future but they are excellent either way. Great easy recipe. Nom nom nom.

I think a better name for these should be "griddle cakes" because this recipe makes me think they should be thick & fluffy, for me they turned out pretty thin. The vanilla really shines through which is nice. I added a pinch of salt. Make sure your pan is super hot & don't be afraid to play around to bump up the flavor.

Great cakes, but my batter was extremely thick!?! More like a dough not a batter. Any suggestions? I followed the recipe to a T are they always that way? Kids loved them, I liked them other then the density! A little less flour? Please respond back! I would make them again!!
