“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

Overall a good recipe when you're out of eggs, although I didn't have any vanilla extract so I substituted strawberry & crème liqueur. The only complaint I have about the recipe is I halved the cinnamon and the pancakes still had a strong cinnamon flavor. But, the batter did create good fluffy pancakes. Will probably eat again.

The pancakes were very tasty. I did not use cinnamon and added a little salt. However the pancakes were very thin and flat. Maybe my baking powder was expired? I will try them again, as my daughter has an egg allergy.

Excellent recipe. I brought down baking powder to one and half tsp and cinnamon to half tsp and increased the sugar to 3 heapfuls of tbsp. Such fluffy pancakes. I also added chocolate chips to some! This is a keeper!!

Wow. Same as most.. no eggs. I have tried SO MANY homemade pancakes, with and without eggs and these are the best!! Thanks so much for posting! (I didn't use the cinnamon and I quadrupled the recipe... I like to freeze the rest) fantastic!! This is my keeper.
