HOT WATER SPONGE CAKE | |
This cake is excellent for making strawberry shortcake. ![]() 4 egg yolks 1 1/2 cups sugar 1/2 cup boiling water 1 1/2 cups flour 1/4 tsp. salt 1 tsp. baking powder 1 tsp. vanilla 4 stiffly beaten egg whites Preheat oven to 325°F. Grease and flour a 9x13-inch pan. Beat egg yolks until thick and light in color. Gradually add sugar and continue beating. Add water and mix. Add dry ingredients and mix well. Add vanilla. Beat egg whites until stiff. Fold into batter and blend well. Pour mixture into pan and bake in preheated 325°F oven for 40 to 45 minutes or until a wooden pick inserted in center comes out clean.
