PEACH COBBLER | |
1 cup brown sugar 4 tsp. cornstarch 6 cups sliced fresh peaches 2 cups Bisquick baking mix 2 tbsp. sugar 1 tsp. lemon rind 1/2 cup milk Combine brown sugar and cornstarch in saucepan. Add peaches and toss to coat. Cook over low heat, stirring constantly, until boiling and thick. Reduce heat and cook 2 minutes longer. Set aside. Combine Bisquick, sugar, lemon rind. Add milk. Stir with fork until moistened. Return peaches to a boil. Pour into 2-quart oblong baking dish. Drop batter on top. Bake at 400°F for 20 to 25 minutes. Serve with lemon sauce. LEMON SAUCE: 1/2 cup sugar 2 tbsp. cornstarch 1 1/4 cups milk 2 tbsp. butter 1 tsp. lemon rind 3 tbsp. lemon juice Mix sugar, cornstarch and milk in saucepan. Cook, stirring constantly, until it comes to a boil and thickens. Reduce heat and cook 2 minutes longer. Stir in butter, lemon rind and lemon juice. Serve warm over slices of cobbler.
