“FLUFFY EGGLESS PANCAKES” IS IN:

FLUFFY EGGLESS PANCAKES 
1 cup all-purpose flour
1 tsp. sugar
1 tsp. cinnamon
2 tsp. baking powder
1 cup whole milk
1 tbsp. vegetable oil
1 tbsp. water
1 tsp. vanilla extract
2 tbsp. butter

Combine dry ingredients and mix slightly. Add milk, oil, water, and vanilla. Whisk together until just combined. Be careful not to over mix - it should still be slightly lumpy. Set aside to rest for a few minutes.

Heat a large skillet over medium-high heat until hot. While pan is heating, add butter. As soon as the butter is melted, add melted butter to pancake batter.

Return pan to stove and stir butter into batter.

When pan is hot, with a measuring cup or ladle, pour 1/4 cup of batter into the skillet for each pancake.

Cook until bubbles form on the surface. Carefully flip pancakes with turner/spatula and cook until golden brown.

Note: This recipe also works well with whole-wheat flour.

Variation: Chopped fruit, nuts or chocolate chips can be added to batter before cooking for a unique treat!

I found myself without eggs this morning, so decided to try this recipe. I was a little concerned about the amount of cinnamon, but my husband loved the pancakes. He admitted he likes the crispy edge that the butter adds, reminding him of his mother's, which were cooked in the leftover bacon grease (shudder). Thanks also for the no-salt. The baking soda gives just the right taste!

The BEST pancake recipe I have ever made, hands down. I used 1% instead of whole milk, no cinnamon, and added blueberries. Very light and fluffy! I usually find pancakes to be dry, but these were so moist that I didn't want to ruin them by adding maple syrup to the top. Perfect in all ways!

Hi Dawne, I do a lot of eggless baking right from scratch but not pancakes though. I usually get the bisquick mix and add some mashed bananas/applesauce and call it pancakes. This morning my husband said why not try a good recipe right from scratch and that's how I landed here. I'm so glad that I did because these pancakes were awesome. It was very light and fluffy.
