LIGHT AND FLUFFY PANCAKES 
1 egg (slightly beaten)
1 c. milk
1/3 c. cream
1 c. to 1 1/2 c. flour (depending on desired thickness of batter)
3 tsp. baking powder
3/4 tsp. salt
1 tbsp. sugar

Combine egg, milk and cream. Then add sifted flour, baking powder, salt and sugar. Do not beat batter too much or the cakes will be tough. Leave slightly lumpy. Bake on a hot, lightly greased griddle, turning once.
