RECIPE COLLECTION
“TACO SOUP” IS IN:

TACO SOUP 
1 lb. lean ground beef (or turkey)
1 onion, chopped
1 pkg. taco seasonings
1 pkg. dry Ranch seasonings
2 large cans diced tomatoes, undrained
1 can Rotel tomatoes, undrained
1 can black beans
1 can pinto beans
1 can whole kernel corn

Brown meat and onion. Drain. Add seasonings. Drain beans and corn. Add to meat along with tomatoes. Simmer until well blended and hot. Eat and enjoy.

Add a bit of grated cheese or sour cream and this simple soup is perfect for cold nights!

I've made a similar soup also and found it to be a crowd pleaser! To enhance the Taco theme I add a small can of chopped chiles. I also put out chopped white onion, shredded iceberg lettuce, and crumpled taco chips. Add a few chopped fresh tomatoes along with the olives and dollop of sour cream and it presents perfectly.

Sooo.. good, especially on those days when you need something fast, easy and healthy. I could not find Rotel tomatoes so used more diced ones with the Jalapeno peppers in it... gave it just a little kick.

Try using hominey instead of corn. Gives it a better taste. Like CAS I am not a cook, but this is so easy and is great anytime.

I have made this for years... I do not drain my corn or beans though. And I serve with tortilla chips. My husband puts the soup over the chips in a bowl.. But I just like to dip my chips in the soup Always a pleaser.

This is a great soup! Great recipe to have on hand for those quick suppers! I also did not drain my corn or beans, and added a can of tomato sauce to make it extra soupy! =)
