POLYNESIAN CAKE | |
3 eggs, beaten 2 c. sugar 2 sm. jars baby food carrots 1 c. Crisco oil 1 c. crushed pineapple and juice 2 c. flour 2 tsp. baking soda 1 tsp. salt 2 tsp. vanilla 2 tsp. cinnamon 1 c. coconut 1 c. walnuts, chopped Combine all ingredients and bake at 350 degrees for 50 minutes in greased 9 x 13 or 2 (9 inch) round cake pans. CREAM CHEESE FROSTING: 1 (8 oz.) cream cheese 1 stick butter (1/2 cup) or butter 1 box confectioners' sugar 1 c. walnuts, chopped 2 tsp. vanilla Mix all but nuts. Spread on cooled cake. Sprinkle with walnuts. |
