POLYNESIAN CAKE 
1 c. oil
2 c. flour
3 eggs
2 c. sugar
2 tsp. baking soda
2 tsp. vanilla
2 jars Jr. baby carrots
1 c. chopped nuts
1 c. coconut
2 tsp. cinnamon
1 sm. can crushed pineapple

Combine all ingredients in a bowl. Mix with spoon. Bake in 9 x 13 inch pan, greased and lined with wax paper in a 350 degree oven for 50 minutes or until done. Do not drain pineapple.
