MY MOM'S MEXICAN CASSEROLE 
1 lb ground sausage (Bob Evans or Italian sausage)
1/2 cup chopped onion
1/2 diced green pepper
1 can tomatoes, diced
1 cup sour cream
1 cup small elbow macaroni (uncooked)
1 tbsp. sugar
1 tsp. (or more, to taste) chili powder
1/2 tsp. salt

Preheat oven to 350°F.

Brown sausage, onion and green pepper in a large skillet. Add remaining ingredients. Cover and cook slowly for 10 minutes. Pour into a casserole dish and bake for 30 minutes at 350°F.

My mother used to make this when I was a child. It is zesty and delicious!

Cooks Note: The original submitted recipe called for 1 tablespoon chili powder, but we used a bit less.

I have been making this recipe quite a bit! I find my self craving it... it is great! I did use a little more chilli powder. Also with my oven I cut the baking time in have so my noodles weren't over done. Also if you like to spice it up a bit Sriracha sauce is great mixed in it! Yum!

This was very good. None left in the pan. I added some Mexican cheese to the top after I took it out of the oven to give it that gooyness.
