MEXICAN HAMBURGER CASSEROLE 
1 pound ground beef
2 tablespoons butter
1 large chopped onion
1 teaspoon finely minced garlic
1 tablespoon chili powder
1 teaspoon paprika
1/2 teaspoon cumin seed
1 teaspoon salt
1/4 teaspoon oregano
Dash pepper
4 cups (2 1-pound cans) kidney beans
1 cup (8-ounce can) tomato sauce
3/4 cup crushed corn chips
1/3 cup Burgundy wine (optional)
1/3 cup grated Cheddar cheese

Brown meat in heavy skillet; spoon into a 2-quart casserole. Melt butter in skillet. Add onion and garlic; sauté until onion is clear. Add spices, beans, tomato sauce, corn chips and wine. Mix thoroughly and spoon over meat. Sprinkle with cheese.

Bake in oven (350°F.) for 30 minutes, or until heated through and bubbly.

Makes 4 servings.

Seriously delicious!! I adapted the recipe to what I had in the house. The differences: I used meatloaf meat (beef, veal, and pork combo); 8 oz shredded sharp cheddar cheese (I'm a cheese fanatic!); no cumin seed (because I didn't have any); 1 tablespoon of butter instead of 2; no burgundy wine; and 16 oz white beans (frijoles blancos) instead of kidney beans. It came out of the oven, and I was the rock star of the evening! It was so tasty, not spicy, and was a complete hit!!

Last night I prepared this recipe exactly as written & it was very good! I had all he ingredients on hand & it was an easy meal. I rated this four stars because I will make this again with a few tweaks. I will definitely add at least 1 or 2 more tbsp. of chile powder, double the cumin, prepare it with pinto beans and give it a couple tbsp. or more of Hatch Green Chile Salsa (Mild or Medium). Herdez Green Chile Salsa would do as well, because since moving to New Mexico I've found myself adding hot/spicy seasoning to just about everything. Again this was very good with perfect flavors for Midwestern tastes; I almost made some Jiffy cornbread (falling back on my NW Ohio roots) but ate flour tortillas & green salad instead.
