EASIEST & BEST HOMEMADE ALFREDO
SAUCE
 
This by far is the easiest and best Alfredo sauce recipe I have found yet! I love pasta and Alfredo and searched forever to make it homemade. I think that too many recipes have too many ingredients and that others are too watery. My girlfriend loves it and makes me cook it at least once a week.. plus you can add it to so many different things! This is a great, simple recipe to make for someone coming over for a dinner date ;)

1/2 cup (1 stick) butter
1 (8 oz.) pkg. cream cheese
1 cup half and half
1/3 cup Parmesan cheese
1 tablespoon garlic powder (optional)
pepper, to taste

1. In a medium saucepan, melt butter.

2. Once butter is almost melted, add the package of cream cheese. It's easiest to cut it into 4 pieces so that it melts quicker.

3. Once butter and cream cheese are mixed well together, add the cup of half and half, Parmesan cheese, garlic powder, and then shake pepper on top. Stir all together until well mixed.

4. Once it's mixed well and sauce-like, take it off the burner and set aside so it can thicken up. Stir every few moments.

5. DONE! Pour over your favorite pasta, I love it with tortellini!

Don't forget some bread-sticks to dip in the extra sauce! :)

Mike, I agree that too many recipes have too many ingredients. I use cooks.com often and I skip over recipes with more than 8 ingredients. Good recipe and easy to make and I had all of the ingredients. I'm not a gourmet cook so close is good enough.

Dan, I would be careful with substituting margarine in this recipe. It depends a lot on the actual ingredients in the margarine you want to use. A lot of the "lighter" versions contain a lot of water and/or air to make them "lighter" - but they are not good for cooking, because they melt away to water and oil, and the air disappears and the volume and texture you started out with is not what you end up with.
If you want to substitute margarine for the butter, get stick margarine and use that. Tub margarine and the other kinds will most likely give you thin, watery or inconsistent results. Besides, part of the "good" in this recipe comes from making it with real butter.

This is very similar to how I make my alfredo but I would suggest substituting for fresh minced garlic. You can use just about anything you have on hand for the cream base: milk, cream, half & half. As far as swapping cream cheese for sour cream ... I would def not advise that. The cream cheese is the magic for this recipe which gives it the delicious smooth creaminess without the tart taste sour cream would yield. Happy cooking :)

You can substitute sour cream for cream cheese in a 1-to-1 ratio. The resulting dish may have a slightly different flavor due to the differences between the two ingredients but it should still be delicious.

This was my first time making homemade alfredo sauce. This recipe was simple, quick and yummy. I will use a little less garlic next time and in response to Krista with the lump issue, try using a whisk, use a good cream cheese and make sure its nice and heated as you are mixing.

This is the best. I shy away from cream sauces, much too difficult. So, I thought! I read the comment about lumps and combined the cream cheese and butter on very low heat. It looked lumpy, but it wasn't; just not mixed well. So I took out a small whisk and gently whisked it. It became very creamy like a pudding. Then, I added the other ingredients and broccoli. We're vegetarians. Yum! We love cheese and garlic. I added more and lost track of how much!

Hi Barbara, I am so glad you liked this recipe. I agree that cream sauces can be intimidating at first but with a few simple tricks they are easy to master. Your idea of using a whisk is great for making the mixture smooth and silky! I love your addition of garlic and cheese, it sounds delicious!

A simple whisk will get the "lumps" out from the sour cream. I enjoyed the taste but didn't love the consistency. Perhaps I used too much sour cream (dipped out of a larger cream cheese container). Added shrimp, broccoli, and extra Parmesan cheese and a 6 and 5 year old devoured it.

People have issues with the clumping of the cream cheese. Just melt the cream cheese in the microwave or in a pot before adding in recipe. Simple fix!

OK, when I melted the butter and then added the cream cheese, I thought 'no way is this correct'! It was initially lumpy or curdle-y looking! but as I whisked in the milk (I used 2% milk in place of the half and half cream) it became creamy and smooth. It really is a wonderful, creamy sauce and plenty of flavor!

Very tasty! Super easy to make also. Be sure to use a whisk to mix ingredients so it won't be lumpy. I cooked mine over medium to medium-low heat and it only took a few minutes to make! I cooked a pound of penne pasta with Italian cheese smoked sausage and it was just enough! Will make this again for sure!

This recipe has ALWAYS been a family favorite! My kids can't get enough of it, and it easily suits my budget for money and time. It's my "if all else fails" recipe! :o) Now, I did want to mention though, for everyone having trouble with lumps....use a small whisk instead of a spoon. Also, as family tradition has it, I also add about 1/2 teaspoon of white sugar, and never make it w/o parsley or white pepper either. My other difference is that I start with half melted butter/half olive oil equally. I then saute chopped FRESH garlic till softened and aromatic, and then proceed as directed above. Thanks OP for sharing this w/everyone!

You could try melting the cream cheese in the microwave -- about 4 or 5 seconds -- to make it easier to blend.

I also used 2% milk and had great results. I used the alfredo in baked Parmesan pasta dish. It was phenomenal. Quick and Simple. This one is a keeper!

Also works well with skim milk. Not that this recipe is for weight watchers, but that's all I had on hand. Other additions: 1/2 tsp. of marjoram, 1/4 tsp. nutmeg and a little extra minced garlic, sauteed in the butter before adding anything else.

This was great!!! Although I thought I had some Parmesan cheese it turned out I didn't so in the middle of making it I had to substitute with regular mild cheddar. But it turned out good :)
