7 lb. cucumbers 2 c. lime 4 oz. alum 1 box ginger 7 lb. sugar 1 tbsp. cloves 1 tbsp. allspice 1 tbsp. cinnamon FIRST DAY: Soak cucumbers, lime, and 1 1/2 gallons water for 24 hours. Drain and rinse well. SECOND DAY: Soak cucumbers in 1 1/2 gallons water and 4 ounce alum for 24 hours. Rinse and drain well. THIRD DAY: Soak cucumbers in 1 1/2 gallons water and 1 box ginger for 6 hours. Drain well. Let soak 4 hours before cooking in 2 quarts vinegar and 7 pounds sugar for 1 hour. Then add spices. Pack in jars at once and seal. |
