PENNE PASTA WITH VODKA SAUCE 
1/4 lb. diced pancetta (Italian bacon), do not substitute
1/4 cup (1/2 stick) butter
1/3 cup vodka
1/2 cup freshly grated Parmesan cheese
1 (16 oz.) box penne pasta
1 1/2 cups heavy cream
1 1/2 cups tomato sauce

Melt the butter in a large frying pan. When the butter foams, add the diced pancetta. When the pancetta browns slightly (takes 2 to 3 minutes), add the vodka and stir.

After the alcohol burns off, stir in the tomato sauce and cream (the alcohol only takes a minute or two to burn off).

Stir continuously for 5 to 8 minutes. Place drained pasta into frying pan, add Parmesan cheese, and mix thoroughly for about 2 minutes.

Serves 4 to 6.

Everyone loves this every time I make it. It is easy if you prep before you start to cook it and make sure to chop up the bacon really small. So good everyone will love it. My kids go nuts for this.

I agree with the comment about cutting the pancetta very finely. It makes a difference when you brown it. Also, for you US cooks, a 15 ounce can of tomato sauce is pretty much exactly 1.5 C. I just pour the tomato sauce in and then fill the empty can with cream and pour that in. I usually put about 1 pound chopped chicken breast in the sauce to simmer and then add the cheese and pasta just before I serve it. My family loves this and I steam some broccoli and serve that as well and they are veryy happy with this very easy, tasty recipe.
