OATMEAL SCOTCHIES | |
1/2 cup (1 stick) butter 1/2 cup firmly packed brown sugar 1/2 cup granulated sugar 1 egg 1 tsp. vanilla 1 tbsp. milk 1 cup sifted all-purpose flour 1/2 tsp. baking soda 1/2 tsp. baking powder 1/2 tsp. salt 1 cup uncooked quick-cooking oats 3/4 cup butterscotch chips Preheat over to 350°F. Cream butter. Add sugars and cream well. Combine and beat in until smooth: egg, vanilla, and milk. Sift together and add to previous ingredients the flour, baking soda, baking powder, and salt. When beaten smooth add oats and once mixed in add butterscotch chips. Beat the mixture well. Drop the cookies 2-inches apart on well-greased cookie sheet. Bake at 350°F for 10 to 12 minutes or until light brown. Makes about 3 dozen (2-inch) cookies. Submitted by: Cari |
