BANANA PUDDING, OLD FASHIONED | |
3/4 c. sugar (1/2 & 1/4 c.) 2 tbsp. flour 1/4 tsp. salt 2 c. milk 3 eggs, separated 1 tsp. vanilla 6 ripe bananas 1 pkg. vanilla wafers Layer bananas and wafers in oven proof casserole dish. Combine 1/2 cup sugar, flour and salt in double boiler. Stir in milk. Cook until thick over boiling water in bottom pot. Cook 15 minutes more. Remove from heat. Beat egg yolks and add gradually to hot mix and cook for 5 minutes, stirring constantly. Remove from heat and stir in vanilla. Pour pudding over bananas. Beat remaining sugar with egg whites until stiff and put on top of pudding. Bake in hot at 425 degree oven for 5 minutes or until lightly browned. |
