EASY "OLD FASHIONED" BANANA PUDDING | |
1 lg. pkg. "cook" vanilla pudding 3 cut-up bananas 3 eggs (yolk for pudding) 1 tbsp. vanilla extract 2 c. milk 1/2 box vanilla wafers Cook pudding over medium heat. Mix package, 2 cups milk, 3 egg yellows (save egg whites for meringue if wanted), and 1 tablespoon vanilla extract. Bring to just before boiling; remove from heat. Line pan with 1 layer wafers, 1 layer of cut up bananas, and 1 layer pudding mix. Do this at least twice. If you want a baked meringue, beat egg whites 3 minutes until fluffy. Add: 1 tsp. cornstarch Beat another 2 to 3 minutes until stiff. Cover pudding. Put in oven (350 degrees) for 10 minutes or until brown. |
