CARIBBEAN PATTIES DOUGH 
This is an easy-to-make dough that yields approximately 16 medium-sized patties. It works well with both sweet and savory fillings.

3 cups all-purpose flour
1 teaspoon salt
2 teaspoons sugar
⅓ cup shortening, room temperature
1 egg, beaten
½ to ⅔ cup warm milk
1 package instant dry yeast

Preheat oven to 375°F.

Combine flour, salt, sugar, and ywat in a large bowl. Cut in the shortening until crumbly. Add egg and stir well. Gradually add enough milk to form a soft dough that doesn't stick to your hands. Knead for about 8 minutes or until smooth and elastic. Place in a greased bowl, turning once to coat the top. Cover with plastic wrap and let rise in a warm place until doubled, approximately 1 hour.

Punch down dough and divide into sixteen equal portions. Roll each portion into a ball and then flatten it out on a lightly floured surface into an oval shape about ¼ inch thick.

Fill with your desired filling (see above for ideas), fold over and seal the edges by pressing firmly together. Place seam side down onto greased baking sheets and let rise again, covered, until doubled in size, approximately 30 minutes.

Bake patties for about 20-25 minutes or golden brown. Serve warm with your favorite dipping sauce!
