CANTALOUPE COOLER | |
1 cantaloupe 1 lemon sugar or honey, to taste 1/4 teaspoon salt Remove the skin, green portion and seeds from the cantaloupe and discard. Cut cantaloupe into 2 inch pieces. Using a citrus zester or a sharp paring knife, remove (and save) the yellow rind portion, being careful not to cut into the white pith underneath, which is bitter. Cut away the remaining white from the lemon and discard. Put the lemon peel and pulp (with seeds removed) and cantaloupe chunks into a blender. Blend until smooth. Add salt and a little sugar or honey; blend again. Taste and add sugar or honey to your taste. Freeze the cantaloupe mixture in freezer trays (stirring once every half hour) or in an ice cream machine until slushy or frozen. Serve topped with whipped cream, if desired. Submitted by: CM |
