HOMEMADE PIZZA MUFFINS | |
DRY INGREDIENTS: 1 1/2 cups all-purpose flour 1/2 cup cornmeal 1 tbsp. sugar 2 tsp. baking powder 1/2 tsp. salt WET INGREDIENTS: 1 large egg 1 1/4 cups milk 1/4 cup vegetable oil TOPPING: 1 (8 oz.) can tomato sauce (Hunts) 1 tsp. basil 1 tsp. oregano 1/2 tsp. garlic powder FAVORITES: 1 cup chopped pepperoni grated Parmesan cheese, for sprinkling Preheat oven to 350°F. Mix together dry ingredients. Whisk together liquid ingredients. Add slowly to dry. Stir until well blended. Add about 1 cup of chopped pepperoni. Grease muffin tin. Fill 2/3 full. Spoon about 1 tablespoon of topping on each and sprinkle with Parmesan cheese. Bake at 350°F for 15 minutes. Submitted by: Melissa Hansen |
