BAKED - HUSHPUPPIE MUFFINS | |
Received this recipe directly from "House of Autry" - as nothing online to provide this - except for hushpuppies themselves. Their people were nice enough to provide both this muffin recipe and one for cornbread - for those that prefer something larger than an original hushpuppy size. 2 cups Hushpuppy mix (I use House of Autry Hushpuppy mix with onion) 1 egg 2 tbsp. oil 1 1/4 cups water (or milk) 1-2 tbsp. sugar (optional) little butter to put over top - before baking Simply mix ingredients. Spray a 6 cup muffin tin (or coat with oil). Bake at 425°F for 20 minutes /or/ until golden. Note: For a more onion flavor - add dried minced onion to your taste. Submitted by: Phyllis Chittum |
