FUNNEL CAKES 
1 1/3 c. flour
1/4 tsp. salt
2 tbsp. sugar
3/4 tbsp. baking powder
Confectioner's sugar
1 egg, beaten
2/3 c. milk, more if batter is too thick
Hot cooking oil

Combine dry ingredients. Mix egg and milk together and add to dry ingredients. Beat until smooth. Hold finger over bottom of funnel and pour in some batter. Let batter drop in spiral motion into pan filled with 1 inch of hot oil. Fry until golden brown, turning once. Drain on paper towels and sprinkle with confectioner's sugar. Serve hot. This makes 3-4 cakes.

This recipe was awesome. I made it with my son as a fun simple dessert. He is two and loved being able to cook with mommy. The only thing is I had to use about a cup of milk because it was more like cookie dough.

So glad I decided to try this recipe! Turned out delicious! I didn't have any milk so I used canned evaporated and also added just a bit more sugar to the batter. Heated my oil to just above medium. This is a good recipe if you just want to make a few. You will certainly have to increase if feeding a crowd! Goodbye $8.00 funnel cakes at the neighborhood festival!
