“QUICK BLUEBERRY COBBLER” IS IN:

QUICK BLUEBERRY COBBLER 
1/2 cup (1 stick) butter, melted
1 1/2 cups Bisquick baking mix
2/3 cup milk
1/2 cup sugar
1/2 tsp. vanilla
3 cups fresh blueberries
2 tbsp. sugar

Preheat oven to 350°F.

Melt butter in a 9-inch square baking dish.

Measure milk into cup. Stir in sugar until dissolved. Add vanilla.

In a bowl, stir together milk/sugar mixture and Bisquick.

Wash blueberries and pick over, removing stems. Toss blueberries in 2 tablespoons of sugar, or enough to coat. Mix blueberries into batter. Pour batter over melted butter in baking dish.

Bake in preheated 350°F oven for about 45 minutes or until golden brown.

Serve warm with vanilla ice cream or whipped cream topping. Toss a few extra blueberries over the topping.

Note: Other berries or fruit may be used for this recipe.

I just made this with only 2 cups of fresh blueberries instead of 3 (because that's all I had); I followed the rest of the recipe exactly (even the stick of butter..yum!); however, I baked it in an 8" square glass pan instead of a 9" pan. I served it hot with a little milk on it. I will definitely be making this again!
