| CUCUMBER SALAD IN VINEGAR WITH ONION | |

3 to 5 cucumbers, peeled 1 red onion 1/2 cup white vinegar 1/2 cup water 1/3 cup sugar dash of salt and pepper Slice onions and cucumber into very thin slices and place in a shallow dish. Stir together vinegar, water, sugar, salt and pepper. Pour over onions and cucumber. Cover and marinate in refrigerator for at least 1 hour. Would rate this 10 if possible. This is a very old recipe and is perfection for any table. My grandmother had this almost daily (raising 12 children). Her garden provided many simple additions to anything she had available to serve... this being one of them. Thank you for posting Judy. I always keep a check for anything/everything you post...
