CANDIED SWEET PICKLES
Drain and throw away the juice from:

1 qt. sour pickles

Slice pickles 1/2 inch into a bowl, then add, mixing well:

3 c. sugar
1 tsp. mixing pickling spices

Cover bowl and leave on counter so you'll remember to stir pickles 3 or 4 times a day for 3 days; each time, digging up sugar from bottom so it will eventually dissolve into a syrup. At the end of 3 days, pickles will be crisp, clear and sweet. Put in a jar with syrup and they will keep indefinitely in refrigerator.

I used this Candied Pickle recipe 3 days ago. The pickles taste exactly as I remembered them from a buffet restaurant in Indiana that I used to frequent. That buffet bought their candied pickles from a company in Indiana and supposedly their method took several weeks for the pickles to become candied. I have seen that company online selling those candied pickles for about $16.00 per quart. I thank the giver of this recipe for sharing it with those like myself that love candied pickles!

What type sour pickles? I have tried with grocery store whole dill pickles and did not get the wonderful crunchy texture -- in fact the results were soft and squishy. I have been told that these must be "sour pickles" but where can one find them? I love the candied sweet pickles and really want to make some. Please help me.
