STOP COMPLAINING AND JUST EAT IT CAKE | |
This cake bakes very slow. Use a huge mixing bowl. Divide batter as you see fit. I make 8 loaves or 2 Bundt's and 2 loaves... makes great gifts! 1 cup (2 sticks) butter 2 cups sugar 6 eggs 3 cups self-rising flour 1 (16 oz.) jar plain applesauce 1 (20 oz.) can crushed pineapple (do not drain) 1 (7 oz.) bag flaked coconut 2 (15 oz. ea.) cans dark sweet cherries, pitted, drained (these are real cherries - look in canned fruit section; not pie filling, not maraschino, either) 2 cups golden raisins 2 cups chopped dates 2 cups chopped walnuts 2 cups chopped pecans Preheat oven to 300°F. Cream butter, sugar. Add eggs. Blend well after each egg. Add self-rising flour. Mix until well combined, scrape now-and-then. Add remaining ingredients in order given. Mix well. Spray bakeware. Do not overfill. Note: Bakes a long time... 75 minutes, more or less. Adjust as needed for selected bake pans. Done when dryish to touch. Cool completely in pan. Loosen with whatever if needed to remove from pan. YUM! I can never make enough batches of this yummy cake. Enjoy! Submitted by: Roxie's Mom |
