COUNTRY CUCUMBER SALAD (SUMMER
SALAD)
 
3 large cucumbers, thinly sliced
1 large onion, thinly sliced
3/4 cup sugar
3/4 cup cider vinegar
3/4 cup water

Mix water, vinegar, and sugar in a bowl until sugar is completely dissolved. Place cucumbers and onions in a large bowl or a gallon size ziplock and pour marinade over and either toss or shake and let marinate several hours to a couple of days.

They're great with barbeque or fried chicken.

I think I may have put closer to 1 cup of cider vinegar but they were perfect!! It's hard to let them marinate however, I just keep wanting to eat them right away!!

I do not like vinegar however this recipe is fabulous. Just make sure your zip bag does not leak. Bit sticky if it's a leaker

I often do this combo - (in smaller amount)... to have with my dinner. Just a couple of onion slices, 4-5 cucumber slices and equal amounts of the 3 marinade ingredients to cover for a couple of hours. This is a regular ~ quick/easy and great addition to any meal... any time of the year.
