MARINATED CUCUMBER SALAD 
1 cucumber
1/2 c. vinegar
2 tbsp. sugar
1 onion
1/2 c. water
1/4 tsp. salt
Dash of pepper

Pull fork firmly down length of cucumber, all around; slice thinly. Thinly slice onion and separate rings. Combine ingredients and pour over cucumber and onions. Marinate in refrigerator for 1 hour or overnight.

These were AWESOME! My Grandmother who is in the nursing home and does not eat well at all asked for some cucumbers in vinegar with sugar. Not sure of what type of vinegar/water/sugar ration I needed, I searched for recipes and found this one. I followed it exactly and only left out the onions because Grandma does not like them. It was FABULOUS! My 11 year old picky eater even loved these and said they were "off the hook". Grandma devoured them, this recipe is very simple and definitely a keeper! Thanks for sharing.

My grandmother had this sitting in a tupperware bowl on the kitchen table all summer long when I was little, I am so happy to have found this! She never did refrigerate it, the vinegar is a natural preservative. plus I doubt it lasted long.

Thanks, sounds just about right... Don't need to junk it up with mayo, sour cream or other stuff. But I knew it needed more than just the load of vinegar that I used last week and boy did my mouth pucker.

Just made this with just picked cucs from my garden. I made it with Asian seasoned rice wine vinegar. Also some green onions that I also just picked. Absolutely delicious!

Just prepared this recipe because other recipes are for large volume (4-5 cucumbers) and I just needed a recipe for one cucumber. I added celery and sliced carrots. I used only white onion because red onion bleeds after a day or so. I heat the vinegar and add sugar to dissolve and then throw in a handful of ice cubes to cool instead of water. Also a few dried chilis and celery seed with fresh from my garden mint. Yum!!!
