JIMMY'S ON THE MALL RICE PILAF 
1 1/2 cups raw rice (preferably UNCLE BEN'S®)
1/2 cup (1 stick) butter
2 (15 oz. ea.) cans chicken broth
1/2 (10 oz.) pkg. frozen spinach, chopped
1 medium onion, chopped
3 chicken bouillon cubes

Combine all ingredients in large saucepan. Cover and simmer over medium heat for 25 minutes, until rice is soft and fluffy.

I thank you so much for posting this recipe. I was thrilled that it is exactly like Jimmy's rice pilaf. I moved from Mass over 10 years ago and crave this dish so much. I have tried to duplicate the recipe never having any success. This was always my most favorite sidedish now and as a kid when I ate at Jimmy's in the 1980's. It is wonderful with anything, especially steak tips.
Again thank you so much for posting this. Now if I can just duplicate Jimmy's marinated steak tips to go along with the rice pilaf. I will have the most perfect meal.

Hi Heather, I don't have Jimmy's marinade but Newbridge Cafe recipe is a bottle of Ketchup, a bottle of italian dressing and a individual sized bottle of coke! poke tips with a fork and let marinade for a few hours! Enjoy!! Its a little different because they use their own dressing and i believe they use their fountain coke, but very very close!

Jimmy's was my favorite restaurant at Burlington Mall. Was so sorry it went out of business when the mall was redone. This rice dish is extraordinary! The restaurant sold gallons of it and this recipe is right on the money!

Do you still live in MA? Jimmy's has two other locations in MA - one in Arlington and one in Saugus. I LOVE the rice and always get it with my meal and another order to take home.

My mother learned this recipe in the late 70's at a cooking class. We're in MA and now I wonder if the person teaching the class maybe worked at Jimmy's? We didn't want to like it (spinach) but resistance was futile. It literally became "The Rice" and has been made at every holiday, cookout, party, etc ever since. I'm making it for a Mah Jongg tournament on Thursday lol. I just looked it up on a whim and this is the only one that makes it "right." Though 40 years ago I believe there was an INSANE quantity of butter in relation to the rice. Thanks for the memory and possibly the origin story of The Rice.

What can I say... I grew up going to Jimmy's in the Burlington Mall, and this is a childhood comfort food. Although I can still go to Jimmy's in Saugus or Arlington... I am so grateful I can make this at home, and this recipe is absolute perfection!!! I throw all secondary ingredients into the pot to boil first, then turn down the heat, and add the rice to simmer for the 25 minutes. Don't overcook, as the extra juices add to the flavor and consistency of this dish. So yummy!!! Thank you for sharing this!!

The rack of lamb at Grass fields is out of this world delicious. My wife loves the broiled scrod.with their rice pilaf.
