RHUBARB COOKIE BARS 
CRUST:

2 c. flour
3/4 c. confectioners' sugar
1 c. butter

FILLING:

4 eggs
2 c. sugar
1/2 c. flour
1/2 tsp. salt
1 tsp. vanilla
4 c. thinly sliced fresh rhubarb
1 c. chopped walnuts (opt.)

Mix crust ingredients together; press into 10"x15" pan. Bake at 350 degrees for 15 minutes. (Crust will be very light colored.)

Combine eggs, sugar, flour, salt and vanilla; beat together. Fold in rhubarb. Spread filling mixture on hot crust; sprinkle with chopped nuts. Return to oven and bake 40 to 45 minutes longer. Cool. Cut into bars.

Makes 36 bars.

This is delicious! I was expecting it to be yummy (I was craving rhubarb at the time) but this is even better than expected. The crust is amazing, and the filling is soo good. Will definitely be making more of this with our home grown rhubarb.

These bars are really delicious. I've tried quite a few different rhubarb recipes, and this is one of the best. They remind me of a lemon square recipe I have. I used 1/2 cup walnuts and 1/2 cup oats.
