RHUBARB COOKIE BARS | |
CRUST: 2 c. flour 3/4 c. confectioners' sugar 1 c. butter FILLING: 4 eggs 2 c. sugar 1/2 c. flour 1/2 tsp. salt 1 tsp. vanilla 4 c. thinly sliced fresh rhubarb 1 c. chopped walnuts (opt.) Mix crust ingredients together; press into 10"x15" pan. Bake at 350 degrees for 15 minutes. (Crust will be very light colored.) Combine eggs, sugar, flour, salt and vanilla; beat together. Fold in rhubarb. Spread filling mixture on hot crust; sprinkle with chopped nuts. Return to oven and bake 40 to 45 minutes longer. Cool. Cut into bars. Makes 36 bars. |
