RICH AND CHARLIE'S SALAD 
3/4 c. olive oil
1/3 c. red wine vinegar
2 cloves garlic, minced
1/2 sm. red onion, grated
1 (4 oz.) can chopped pimento

SALAD:

1 med. head lettuce
1 average head romaine
1 c. hearts of palm, sliced
1 c. canned artichoke hearts, drained and halved
1 med. red onion, sliced thin
1/2 c. Parmesan cheese

Mix all dressing ingredients together in a jar 6 hours in advance (dressing will keep for 4-6 weeks). To make salad, tear head lettuce and romaine into a bowl. Add hearts of palm, artichoke hearts and red onion. Sprinkle with Parmesan cheese; pour dressing over all and toss thoroughly. Chill 20-30 minutes before serving.

I live in St. Louis, and grew up eating Rich-n-Charlie's salads. this is the closest recipe I've found, BUT you do need to use 1 cup Parmesan for the salad, put 2 tablespoons Parmesan in the salad dressing, and add a pinch of sugar to the salad dressing as well. I diced the onions instead of grating them for the dressing. Absolutely delicious!!!
