GREEN PEAS BONNE FEMME 
1/4 lb. Canadian bacon, cut into 1-inch pieces
1 tbsp. butter
3 c. fresh green peas (or frozen)
6 sm. white onions, peeled
Inner leaves of lettuce head
1/2 c. water
1/2 tsp. salt
1/4 tsp. white pepper
1/2 tsp. sugar
1 tbsp. finely chopped parsley

Fry bacon in butter until lightly browned. Add peas, onions, lettuce, water, salt, pepper and sugar; cover. Cook 10 to 15 minutes, until peas are tender; drain. Sprinkle with parsley before serving. Serves 6.
