ROASTED HERBED CHICKEN W/ LEMON
(CROCK-POT)
 
1 (3-5 lb.) whole chicken
6-8 redskin potatoes
1 garlic clove, chopped
1 lemon
1/2 cup (1 stick) butter, divided
3-4 sprigs fresh rosemary
fresh green beans (amount to your liking)

Rinse and pat dry the whole chicken and add it to your Crock-Pot. Rinse and quarter the potatoes. Add the potatoes to the Crock-Pot (place them around and not on top of chicken). Rub garlic onto the chicken and place any leftover in Crock-Pot.

Cut the lemon into half. Use the juice of one half of the lemon to sprinkle all over the chicken and stuff the other half inside the chicken.

Melt half of the butter and pour over chicken. Spoon remaining butter onto chicken. Place the rosemary sprigs on top of the chicken. If you choose to use the green beans you would also place them on top of the potatoes in the Crock-Pot.

Cook on HIGH for 3 to 4 hours or on LOW for 6 to 7 hours.
