HEATHER'S APPLE COBBLER
You will love this fool-proof, somewhat traditional version, easy to make, crowd-pleaser apple cobbler recipe! I have tried many over the years, and found myself having to modify several steps/ingredients to suit my taste.

Filling:

6 cups green apples (peeled/sliced)
3/4 cup white sugar
2 tablespoons brown sugar
1/4 cup flour
1 teaspoon cinnamon
1/2 teaspoon nutmeg
1 teaspoon vanilla extract
1/4 cup hot water
1-1/2 tablespoon butter

In a large bowl, combine all filling ingredients (except butter), gently in a toss-like motion. Pour this mixture into a pie dish, or square baking dish that is lightly buttered or sprayed with non-stick spray.

Now, place butter on top of filling in the center.

Topping:

1 cup all-purpose flour
1/4 cup white sugar
1/4 cup brown sugar
1 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter, softened
1 egg

Prepare topping by mixing all topping ingredients in a separate medium bowl.

Mix with a spoon until batter is smooth. Drop batter on top of the filling with a spoon, as evenly as possible.

The batter will spread while being cooked.

Bake at 350°F for 30 minutes.

Serve with vanilla ice cream or whipped topping.

Serves 6.

Seems like a liquid is missing from the batter portion of the recipe. It turned out more like a crisp instead of a cobbler. The egg and butter were not enough to make a batter as the recipe states.

I just tried this recipe and the topping is not batter. It's very dry and crumbly. Are the measurements proper here? Seems to have worked out for others but didn't work out for me....

 Tess (United States) replies:
Ten more minutes to go. It smells wonderful and our topping worked out fine. It's not dry at all.

I don't understand why some people are changing things in the recipe. This is absolutely amazing the way it is. Read the directions and you will get it right. Not being mean but some things do not need changing.

Thanks Heather for your Apple Cobbler recipe, I made it last night and it was wonderful, "DIDN'T" change a thing. Some people just have to change or add too a recipe whether they have tried it or not.

I made this recipe and the topping seemed dry are you sure there's no water in topping? I added some water other than that it sounded good thanks.

 Lucille replies:
So good! Will definitely prepare again. Topping was a little dry - I used 2 eggs instead of 1.

 NANCY replies:
I have to agree with other reviews -- not enough moisture in topping -- I added 1/2 cup of milk. I also put the vanilla in the topping -- not in the filling. Needed some adjustments.

 Carmen replies:
The topping certainly did not appear to be batter like, so I melted the butter and mixed it in thoroughly the second time around until it cleaned the bowl. I dropped the dough in portions on top and baked it. Turned out quite well and very tasty. I'm keeping the recipe.

 Carolyn Maccariella (Pennsylvania) replies:
Excellent. The topping was not dry at all. The problem people are having with the topping is the butter has to be really soft and mixed well, that's it! Do not change a thing. Outstanding!

 Loveables (New York) replies:
Same as the one lady said it was more like a crisp apple the topping was very dry real crumby like wasn't a batter at all but overall it was good I used canned apples instead of fresh apple. It was good though!

 Candi (Pennsylvania) replies:
I agree with Jackie... Not enough liquid for the batter.. Disappointed because I wanted to make a cobbler not a crisp. It tastes like pie...

 MARIANNE says:
When I made this, I used the suggestions from others. I used 2 eggs instead of 1 and added 1/2 cup of milk. I also put the vanilla in the topping, not the filling. It turned out more of a crisp than a cobbler. It was great though. I received a lot of compliments!

 Linda replies:
My hubbie made this last night. There is just a small corner of cobbler left this afternoon. I agree that it is more of an apple crisp, but in some parts the flour is packed in a way that is like a cobbler. I call it apple crisp-cobbler. The flavor is to die for. I was moaning with every bite! I told my husband he is forgiven for every bad thing he has ever done and will do in life because of this "crisp-cobbler".

 Kristy says:
To die for! My hubby and I just loved it! Crust was excellent, I didn't think it was too dry at all! Perfect!

 Chris (Arizona) says:
What I tried to fix the moisture in topping was use 2 eggs instead of one, 1/2 cup milk and instead of putting the topping on the top I put it in the bottom so it would have to travel through the apple filling to the top. Fixed problem. Just dropped temp to 325°F. Hopefully this might help some out.

 Micki (Washington) replies:
OMG!!! This is the BEST, absolutely, most WONDERFUL, apple cobbler I have ever had. I tried it with Chris (AZ)'s suggestions and it turned out perfectly. I've never made an apple cobbler before and this one was very easy. It reminds me of the one my Nana used to make when I was a child. I highly recommend y'all try it!

 CollegeKidThatCooks (Virginia) says:
Recipe is good! But I would change two things:

- 8 cups of apples instead of 6 (I like thinner slices than most so maybe that's why).
- Slice the 1 to 1-1/2 tbsp. butter if you have the stick kind and spread it on top, i'd say 4 squares in each corner, instead of one chunk in the center. The middle tastes extra buttery and the flavor isn't even.

Great Recipe!

Any time you bake a cobbler, the one thing always forgotten in recipes is to add a little water to the dish before you add the topping and bake. It will not take away from any of the flavors, but it will create the juicy filling you desire. My granny baked for 50 years and that was the first piece of advice she gave me before making my first cobbler.

 Anna Harper (North Carolina) says:
This is absolutely delicious! However, when I cooked it, it took about 25 minutes longer than the recipe said, and the apples were still a little crunchy (not soft). Did anybody else have this happen?

 Pat (Georgia) says:
This is a good recipe. My family loves it. Those who have problems with it It's because you are NOT using soft butter. It has be almost to a melted consistency.
 #130980
 Theda (Missouri) replies:
Pat, your soft butter comment is not the solution to the problem. Using enough liquid is. I used soft butter and 1 egg and did not get a "batter". I got a crumble which is quite tasty but this is not a cobbler by any means. I was going to use some milk to make a drop batter but did not. Next time I will. I still say this recipe as regards the topping is confusing to people and could be made much better.

 Chris (California) says:
Added 1 cup buttermilk to the topping for more of a cakey texture. Yum!!!

 Lydia (Maryland) says:
This recipe was good, however I was looking for a more cakelike batter. Will use again but will add some sort of cream. Happy eating!!!!

This recipe is simple & deliciously tasty. I just made it a lil while ago && my boyfriend loved it... Only thing I did was take a tip and added the vanilla to the topping, and 2 eggs & the 1/2 cup of milk... Instead of the crispy taste it gives it a nice cakelike texture a bit.

I just tried this. Apples were not cooked, and a little too sweet. The topping turned out fine after cooking. I will try this again but with less sugar and cook it longer.

 Cat (United States) replies:
You might need to try a different type of apple. Some apple's take longer and some take shorter times to cook.

This recipe was the best! Easy to prepare, you can use ingredients already in your pantry. I did make a few modifications though. I used 4 cups of sliced apples and 1 bag of frozen blueberries that I had in the fridge. I added 1 tsp. of vanilla into the apples, eliminated the hot water, and used cornstarch instead of flour. I think cornstarch makes the filling more clear, not cloudy and you don't get that "flour" taste. I also sprinkled extra fine sugar and cinnamon on top of the batter before putting it into the oven to bake. It turned out absolutely fabulous!!! This recipe is a keeper!
