MEXICAN BAKED ZITI 
1 lb. ground turkey
1 small onion, chopped
1 cup chopped green pepper
2 tsp. olive oil
3 tbsp. chili powder
1 tsp. cumin powder
1 tbsp. brown sugar
dash cayenne pepper
1 (24 oz.) jar marinara sauce (your favorite)
1 (15 oz.) can diced tomatoes (Hunts)
1 (16 oz.) box ziti pasta (Barilla)
2 cups shredded Monterey jack/cheddar blend cheese

Preheat oven to 350°F.

Sauté onions and peppers in olive oil. Add ground turkey and brown. Add spices and sauté 1 minute. Add tomatoes and marinara sauce. Cook pasta al denté while sauce simmers.

Coat a baking dish with non-stick cooking spray and add layer of sauce. Add layer of pasta and sprinkle with cheese. Continue layering sauce, pasta and cheese, ending with cheese.

Bake at 350°F for 30 minutes.
