BOONE'S BBQ BAKED RIBS | |
1 slab of ribs (any cut) 2 cups orange juice 1 sweet onion, diced 1 green bell pepper, diced DRY RUB SEASONING: 3 tbsp. salt 3 tbsp. pepper 3 tbsp. cayenne pepper 3 tbsp. chili powder 3 tbsp. garlic powder 3 tbsp. onion powder 3 1/2 tbsp. brown sugar 1 3/4 tbsp. crushed red pepper flakes Preheat oven to 300°F. While oven preheats clean your ribs with warm water and pat dry. Remove to the layer of skin from the bone side of the ribs. Once you have done that begin to season your ribs until covered. Place ribs in a large casserole dish and pour 2 cups of orange juice in the bottom of the dish. Cut half the sweet onion and the entire bell pepper into small cubes and place in the dish. Cover with aluminum foil. Bake at 300°F for 1 hour or until fork tender. Remove foil and apply homemade barbecue sauce (see below) with a brush and allow to brown in oven as desired. HOMEMADE BBQ SAUCE: 1 cup orange juice 1/2 sweet onion 1/2 cup molasses (Grandma's) 2 tbsp. garlic powder 1 tbsp. liquid smoke 1 (6 oz.) can tomato paste (Hunts) 1/2 cup brown sugar 2 tbsp. crushed red pepper flakes Combine barbecue sauce ingredients in a medium saucepan. Allow everything to dissolve and let the sauce thicken. Variation: Instead of orange juice you can you any citrus or acidic liquids. Submitted by: Darius Boone |
