APPLE RAISIN COFFEE CAKE 
3/4 c. sugar
1/4 c. shortening (butter)
1 egg
1/2 c. milk
1 1/2 c. sifted flour
2 tsp. baking powder
1/2 tsp. salt
1/2 c. plumped raisins
1 lg. apple or 2 small ones
Cinnamon and sugar, 2 tbsp. each

Or use self-rising flour.

Cream sugar, shortening, egg and milk and raisins. Add flour mixture. Spread batter in greased and floured square pan (9 x 9 x 1 3/4 inch). Arrange thinly sliced apples in a fancy design on top of batter, pressing them slightly. Sprinkle with cinnamon and sugar mixture.

Bake at 350 degrees for 25 to 35 minutes. This delicious coffee cake has been enjoyed over many a cup of coffee on a cold, snowy day with my mother, Jeanie.
