“STRAWBERRY CAKE WITH CREAM CHEESE FROSTING” IS IN:

STRAWBERRY CAKE WITH CREAM
CHEESE FROSTING
 
Cake:

1 pkg. plain white cake mix
1 pkg. strawberry gelatin
1 cup mashed strawberries with juice
1 cup vegetable oil
1/2 cup whole milk
4 large eggs

Preheat oven to 350°F degrees.

Lightly grease three 9-inch round pans. Set pans aside.

Place cake mix, strawberry gelatin, mashed strawberries, oil, milk, and eggs in large mixing bowl and beat on low speed for 1 minute. Strawberries should be well-blended.

Divide batter among pans and place in oven.

Bake cakes until lightly brown (about 28-30 minutes). Remove from oven and allow to cool for 40 minutes. Prepare frosting.

Cream Cheese Frosting:

1 (8 oz.) pkg. cream cheese
1/2 cup (1 stick) butter
3 1/2 cups confectioners' sugar
3/4 cup mashed strawberries (drained)

Combine cream cheese and butter and mix on low speed for a minute. Add sugar and strawberries. Blend frosting on low until sugar is incorporated.

To assemble: place one cake layer on plate and spread top with frosting, add another cake layer and frost the top, add last cake layer and frost the top. Use remaining frosting for the sides of the cake.

Optional: Place fresh strawberries on top of frosting for decoration.

Makes 1 (3 layer) cake.

This is very good cake and frosting!! But it does have lots of sugar but best cake I have ever tasted. I would suggest you make a different type of frosting if your not a strawberry lover!!

This cake is amazing! I made it for my son's 5th birthday because he wanted a strawberry cake. It was very very good. I had trouble with icing being very runny. Had to keep it in the refrigerator but the taste was great! I am going to try this again since my kids are complaining that the cake is GONE.. haha. I am going to try and use fresh strawberries in the icing so it is more thick.

This cake is simple and the best cake i've ever had! I made three of these cakes in one and half weeks! I took this cake to a family Christmas and one of my sister in laws said I didn't know you knew how to cook like this! Everyone loved the cake and it went quickly. This is a must try cake! My second cake I used too much mashed strawberries for the frosting and it was a bit runny - use 3/4 cups just like it says and make sure to mix cream cheese and butter first!

I really appreciate the comments as I've not made the cake yet. My concern was fresh vs frozen strawberries. With everyone's comments, I now know what not to do. Perfect for Easter dinner.
