CZECH FLICKY (FLEECH-KEY)
1 pound package wide egg noodles
1/4 cup (1/2 stick) butter
1/2 teaspoon salt & pepper
1 cup cooked ham, bite size cubed
4 eggs
1 cup milk (can also use half & half or cream)

Preheat oven to 350°F.

Boil noodles in water per package directions. Drain noodles, then return to pot. Add butter, salt, pepper and cubed ham to noodles, stir to coat. Pour into a greased casserole dish.

Mix eggs and milk. Pour over noodles. Bake until noodles on top are golden and slightly crispy about 30 minutes.

Optional: though not in the traditional version, my husband likes this when I add 1/2 cup cubed Velveeta to it, if using add with ham, similar versions also add 1/2 cup sautéed onion).

 David (Tennessee) says:
Both of my Czech grandmothers would make this dish... My Tennessee born wife substitutes readily available smoked pulled pork for the ham and will sometimes add Bentons bacon. Then my son, adopted from Vietnam, eats his with Sriracha...

My mother made this dish but omitted the eggs and milk... just buttered noodles and leftover ham. Wonderful memories!

Same here... much fluffier - made it today. We use ground ham leftover from Easter or Christmas dinner.

My Mom made this for a small restaurant & at home. Found that using smoked butt was much better, less salty.
Also just using hot-buttered wide egg noodles and mixing with the cubed meat was less dry.
I liked adding Western or French dressing to moisten and spice it up. Kid friendly- You can also add ketchup, but do the adding at the table, bowl-by-bowl.

I have wonderful memories of eating my grandmothers fleetchkee. Now I make it for my granddaughters and they love it too! They always want apple sauce with it. I sometimes make in a frying pan on the stove top instead of baking. Mmmm

My bohemian parents made this with cottage ham diced and small egg flake noodles, I'm now 66 and make for my siblings as a special treat. Leftovers were heated in a frying pan for breakfast.

 David (Florida) replies:
Yes, the small noodles. Goodman's was the brand my mom & grandmother used I think. However there's no cabbage in this recipe and my family cooked it in a skillet.

 Lois (New York) replies:
Yes, David, it was Goodman's small noodles, I believe they were square.
So many memories of this recipe when I was growing up. I am almost 76 now.

YES! They were small square homemade noodles that my gramma used to make : ) Does anyone remember a homemade tomato sauce poured over the top?

My grandmother would make this but she used pepe past, ham, heavy cream, onion and eggs, and about 6 to 10 pats of butter. I still make it to this day. Awesome memories of her. Love this dish.

My bohemian/czech parents and grandma would make this but no egg or cream. Just noodles with butter ham and we sprinkle sugar over the noodles. One of my favorite memories from growing up.

My Dad is Czech and learned how to make fleech-key from my Dad. I am 72 and have made the dish numerous times for my family. I make it with wide egg noodles (cooked), diced smoked ham, eggs and butter. I still LOVE this dish, to this day. Now I'm hungry... lol!

My Czech grandma made this exactly like the recipe. My mom added Parmesan cheese and bread crumbs on top. Either way it brings back great memories. I especially like it at breakfast.

I have been looking for a recipe for this dish for years. My mom was 100% Czech and we had this whenever my German father wasn't home for dinner. Loved it as a kid! Will have to try this recipe.

I boil a large cottage Ham, Then dice into very small pieces.
I boil either 2 or 2 12 bags egg flake noodles (tiny square).
In bowl I crack 6-8 eggs mixed with 3 tablespoons caraway seeds.
In a butter roasting pan mix all together, bake with lid about 3 hours, 350°F during baking I add a few pats butter in all about 1/2 stick. Eat when done and / or in skillet add a little butter and heat (light fry) for breakfast.

We used to use leftover pork spareribs, when we didn't have ham. Loved it growing up!

My mom and grandma just did onion, ham, noodles, butter, salt and pepper. I know it as "shuns-key flinshkey". No idea how it's actually pronounced.

Our Czech family recipe included crushed tomatoes as a topping (cold). Adds a freshness that compliments the ham!

My Bohieman grandmother made this dish with ground ham. My mom and I always used her meat grinder for the ham. In memory of my NANA.
