STRAWBERRY CAKE WITH CREAM
CHEESE FROSTING
 
Cake:

1 pkg. plain white cake mix
1 pkg. strawberry gelatin
1 cup mashed strawberries with juice
1 cup vegetable oil
1/2 cup whole milk
4 large eggs

Preheat oven to 350°F degrees.

Lightly grease three 9-inch round pans. Set pans aside.

Place cake mix, strawberry gelatin, mashed strawberries, oil, milk, and eggs in large mixing bowl and beat on low speed for 1 minute. Strawberries should be well-blended.

Divide batter among pans and place in oven.

Bake cakes until lightly brown (about 28-30 minutes). Remove from oven and allow to cool for 40 minutes. Prepare frosting.

Cream Cheese Frosting:

1 (8 oz.) pkg. cream cheese
1/2 cup (1 stick) butter
3 1/2 cups confectioners' sugar
3/4 cup mashed strawberries (drained)

Combine cream cheese and butter and mix on low speed for a minute. Add sugar and strawberries. Blend frosting on low until sugar is incorporated.

To assemble: place one cake layer on plate and spread top with frosting, add another cake layer and frost the top, add last cake layer and frost the top. Use remaining frosting for the sides of the cake.

Optional: Place fresh strawberries on top of frosting for decoration.

Makes 1 (3 layer) cake.

This recipe is perfect just as it is written. If you want to change the recipe with paragraphs of additions you need to enter that as your recipe. This cake is LOVED everywhere I have taken it. I have had people beg for it and I've had people holler out when they first tasted it! It is definitely a favorite just as it is!

This recipe has been my "go to" for special occasions for a number of years. It never fails to elicit compliments. I always use strawberry cake mix instead of white. I have used both frozen and fresh strawberries. I like fresh better. I have also found that cutting the amount of strawberries in the frosting down to a 1/2 cup and, making sure they are very well drained helps the frosting be less runny. I also add 1 tsp of vanilla to the frosting.

I used the cake recipe to make cupcakes, they were good flavor but VERY heavy, moist, and dense. 1 cup oil is far too much in my opinion, that's really a ton of oil for this amount of cake. The cake mix box only calls for 1/4 to 1/3 cup oil. I do love that all the water needed for the cake mix is replaced by strawberries and juice, that's great. Also I like the addition of the strawberry jello mix to augment the strawberry flavor. I also recommend to completely puree the strawberries, whether frozen or fresh, before adding them to the cake mix, because the mixer isn't going to break up big chunks of strawberry. I made cupcakes with the recipe, if you use 1/4 cup batter for each it makes at least 24, and bake for 18-21 minutes. In future I will use this recipe again but reduce the oil to 1/3 or 1/2 cup, and I'm not sure the milk is necessary either. I didn't make the frosting, I used a chocolate frosting recipe with 1.5 packages cream cheese and 1.5 stick butter, 3.5c powdered sugar, and 2/3 cup cocoa vanilla and bit of salt, which was very good.

Loved this cake, I added a little graded lemon zest and vanilla to the frosting and omitted the mashed strawberries, instead I put the mashed strawberries as a filling between the cake layers and this worked Really Well! Loved the dark rich pink color of the cake.
