OVEN BAKED BARBECUE SPARE RIBS 
10 lb. country style pork spare ribs (boneless), at least 1 1/2-inch thick
liquid smoke
Kosher salt
black pepper

Sprinkle ribs evenly with liquid smoke; a little liquid smoke goes a long way! Salt and pepper the meat evenly. Place ribs in a covered roasting pan and bake at 325 degrees for 1 1/2 hours.

While pork is roasting, prepare barbecue sauce.

BBQ SAUCE:

1 cup ketchup (Hunts)
1 cup Sweet Baby Ray's honey barbecue sauce
1 cup honey

Mix ketchup, Sweet Baby Ray's Honey Barbecue Sauce and honey in a heavy saucepan. Stir and simmer until well combined, about 15 minutes.*

After roasting pork for allotted time, remove from oven; drain and discard juices from meat. Pour cooked barbecue sauce mixture over meat, coating all sides well.

Increase oven temperature to 350°F. Cover roaster and return meat to oven for another 25 minutes. Then uncover the meat and allow to cook another 20 minutes. This causes the sauce to thicken a bit.

Serve with white rice and fresh pineapple chunks.

Note: If you like extra barbecue sauce for your rice, double the barbecue sauce amounts; it won't be too much!
