WHITE CAKE SUPREME CUPCAKES 
2 c. all-purpose flour
1 tbsp. baking powder
1 tsp. salt
3/4 c. shortening
1 1/2 c. sugar
1 1/2 tsp. vanilla
1 c. milk
5 egg whites

Combine flour, baking powder and salt. In a mixing bowl, beat shortening on medium speed of electric mixer about 30 seconds. Add sugar and vanilla and beat until fluffy. Add dry ingredients and milk alternatively to beaten mixture, beating on low speed after each addition. Wash beaters.

In a small mixer bowl, beat egg whites until stiff peaks form. Gently fold into flour mixture. Grease and lightly flour muffin pans or line with paper baking cups. Fill each cup half full. Bake at 375 degrees for 18 to 20 minutes or until done. Cool on a wire rack. Frost with desired frosting. Makes 30 cupcakes.
